Our Cabbage Health Slaw is a vibrant mix of shredded veggies and a zesty mustard-honey dressing. It’s a deliciously crisp side for any meal—or a wholesome lunch all on its own.

Ingredients:
Slaw Base:
- 6 cups green cabbage, shredded (about 1 medium head)
- 2 cups red cabbage, shredded (about ½ a medium head)
- 1 cup carrots, shredded
- ½ cup fresh cilantro, chopped
Dressing:
- ¼ cup extra virgin olive oil
- 2–3 tablespoons apple cider vinegar (adjust to taste)
- 2 tablespoons grain mustard
- 2 tablespoons Manuka Doctor honey
- ½ teaspoon salt
- ¼ teaspoon black pepper

Directions:
1-Prepare the Vegetables:
- Shred the green and red the cabbage finely using a sharp knife or food processor.
- Peel the carrots and grate them using a grater or food processor grating disk.
- Rinse and chop the cilantro leaves finely with a sharp knife.
2-To make the Dressing:
Combine:
- ¼ cup olive oil
- 2–3 tablespoons apple cider vinegar (start with 2, taste and adjust)
- 2 tablespoons grain mustard
- 2 tablespoons Manuka Doctor honey
- ½ teaspoon salt
- ¼ teaspoon black pepper
Whisk:
until smooth and fully emulsified, or shake well if using a jar.
3- To Serve:
In a large mixing bowl combine all the veggies and dressing. Toss thoroughly with salad tongs to coat all the veggies evenly.
Hints:
Enhance your coleslaw by experimenting with crunchy mix-ins, varied aromatics, and flavourful dressing swaps. Simple additions like dried fruit (raisins or cranberries), toasted nuts (walnuts, pecans, almonds), or fresh herbs (cilantro, mint, dill) can drastically improve texture and flavour.
