Grilled Peach & Manuka Honey Salad

Grilled Peach & Honey Salad

INGREDIENTS

  • 3 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • 2 tablespoons Manuka Doctor Honey
  • 4 cups mixed greens (arugula, spinach, and kale)
  • 1/4 cup crumbled goat cheese or feta
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup red onion, thinly sliced
  • Balsamic glaze
  • Salt and pepper to taste

DIRECTIONS

Peaches

  1. Preheat your grill to medium-high heat
  2. Brush the peach halves with olive oil on all sides
  3. Place the peach havles on the grill, cut side down
  4. Grill for 3-4 minutes per side, until they are caramelized. Remove from grill.
  5. Once cooled, slice the peaches into wedges.
  6. In a large salad bowl, combine the mixed greens, cheese, slice almonds, and red onion.
  7. In a small dressing bowl, whisk together the remaining olive oil, Manuka Doctor honey, salt and pepper
  1. Add the peach slices to the mixed greens, drizzle over the Manuka dressing, and gently toss to combine
  2. Finish with a drizzle of balsamic glaze over the top for extra flavor
